Pumpkin Stew

This tasty stew is great for any Autumn night, not just Halloween!

Ingredients:

1/4 cup (55g) butter
2 onions, chopped
1 carrot, chopped
1 stick celery, chopped
3 sprigs rosemary
2 bay leaves
1 clove garlic, chopped
2 cups (400g) lentils
5 cups (1.2 liters) vegetable stock
1.5 lbs (600g) assorted pumpkin or squash (total chopped weight), large chunks
Small bunch parsley, chopped
2 tbsp red wine vinegar
4 tbsp sour cream

Instructions:

Melt the butter in a large pan before adding the chopped onions, carrot and celery.

Tear in the rosemary and a couple of bay leaves and after a few minutes add the chopped garlic.

Once softened, add the lentils and pour over 1litre/1¾ pints of vegetable stock. Bring to the boil and then leave to simmer whilst you tend to the pumpkin/squash.

Add the pumpkin/squash to the stew, season and then pour over enough water to just cover all the ingredients.

Put a lid on the pan and leave to simmer for 30-40 minutes.

When the stew is almost ready, add the chopped parsley.

'All it needs is a pinch of...'

To make the stew creamier, remove a small bowl full to a food processor and blitz it with 200ml/2fl oz of stock. Pour it back in to give a more velvety texture!

Serve the stew in bowls topped with a spoonful of sour cream.

Why not use different types of pumpkin/squash to create your own delicious flavors?

Bacon and Cheese Roll-Ups

Simple yet delicious, a great option for an autumn snack!

Ingredients

8 slices of bread, crusts removed

8 slices of cheese or 1 cup grated cheddar

8 slices precooked bacon

1/4 cup butter

Instructions:

Using a rolling pin, roll the slices of bread so they are nice and flat

Place one slice of cheese (or 2-3 tablespoons grated cheddar) on each slice

Roll up the bread & cheese

Wrap one slice of bacon around each roll, securing with a toothpick

Place in a skillet over medium-low heat with a small spoonful of butter

Ensure the bread edges are covered with the butter and turn the rolls with tongs until all sides are browned

Serve straight from the pan and enjoy hot - you can even add some dips for an extra tasty bite!

Did you know?

Pumpkins did not grow natively in Ireland. Ancient Celtic cultures made their jack-o-lanterns by carving turnips and placing an ember in them. This tradition came from the folk tale of Stingy Jack who was a mean trickster. After his death, he was forced to roam the dark between worlds with only a hollowed turnip and ember to light his way. The jack-o-lantern is meant to ward off evil spirits like Stingy Jack.

Song Lyrics for Mister Nice Guy

Gosh, it's such a hoot to see them quaking.
When I'm King they'll treat me with respect.
I can't wait to watch their poor hearts breaking.
So much for politically correct.

Up till now, I've pulled my punches.
I intend to eat my lunches.
No more mister nice guy.
Not for me!

If you think that I'm hard-hearted,
Well lamby pie, I haven't even started.
No more mister nice guy.
Wait and see!

Soon as my witchcraft has zinged them,
I'll gain control of the Kingdom.
As for Odette that's tragic
'Cause I'm going back to that old black magic!

Good behavior, it's so much duller.
Time to show my one true color.
Baby mister nice guy's history!

Vengeance is what I believe in,
I don't get mad, I get even!
Odette can't get to the ball 'cause I won't bring her.
So I'll zap up a date whose a real dead ringer!

Up to no good, I love plottin, 'cause I'm so good when I'm rotten.
No more mister nice guy.
Wait and see!

I'll become a nasty, naughty, petty, spiteful,
wicked, wayward, way delightful.
That guy I was born to be!

Lyin', loathsome, never tender.
Indiscreet, repeat offender.
No more mister nice guy, that's not me!
