This month is a time when many people across the world celebrate their Dad, Grandad and any other figures who have taken on such a role. From supporting achievements to teaching new things, thank you to the brilliant Fathers everywhere!

Coffee and Walnut Cake

Complete with a sweet filling, topped with icing and sprinkled with chopped walnuts, Alise will bake this delicious cake as one of her Father's Day gifts for Prince Derek.

Ingredients:
• 1 tbsp coffee granules, plus 1 tsp
• 1 3/4 cups (225g) self-raising flour
• 1 tsp baking powder
• 1/2 cup (50g) ground almonds
• 1/2 cup (85g) light muscovado sugar
• 1/4 cup (50g) golden caster sugar
• 1/4 cup (25g) chopped walnuts
• 2 eggs , beaten
• 1 cup (250g) natural yogurt
• 1/3 cup (75ml) walnut oil

For the filling
• 2 tbsp golden caster sugar
• 2 tsp coffee granules
• 140g light mascarpone
• 100g quark
• 1 tbsp icing sugar
• ¼ tsp vanilla extract

For the icing
• 140g fondant icing sugar
• 1 tsp coffee granules
• 1 tbsp finely chopped walnuts

Step 1
1. Preheat the oven to 350 F (180C/160C fan/gas 2). Oil and line a 8 inch (20cm) round, loose-bottom tin.

3. For the cake, mix the coffee with 2 tsp warm water and set aside.

4. Tip the flour into a large mixing bowl with the baking powder, ground almonds, both sugars and the walnuts

5. Make a dip in the center of the dry mix.

6. Put the eggs, oil, yoghurt and coffee mix into the dip and stir the mixture with a wooden spoon until combined.

7. Spoon the mixture into the tin and carefully level the mix.

8. Bake for 40-45 mins until a skewer inserted into the center of the cake comes out clean.

9. Allow the cake to cool in the tin, then turn it out and remove the lining paper. Leave to cool completely while you make the filling and icing.

10. To make the filling, put the caster sugar and coffee into a small, heavy-based saucepan, then pour in 3 tbsp water.

11. Heat gently, stirring to help the sugar dissolve.

12. Once dissolved, raise the heat and boil at a fast rolling boil for about 2½ mins until thick and syrupy.

13. Pour the hot mix into a small heatproof bowl and set aside to cool (when cooled it should be thick like treacle).

14. Meanwhile, finish the filling by beating the mascarpone, quark, icing sugar and vanilla together until smooth, then stir in the now cold coffee syrup and put to one side.

15. For the icing, sift the fondant icing sugar into a bowl. Mix the coffee with 1 tbsp warm water and add it to the fondant icing sugar with 1 more tsp water to give a smooth, thick but spreadable icing.

16. Using a long knife, carefully cut across the cake horizontally to split the cake into 3 layers.

17. Sandwich the layers back together with the filling.

18. Spread the icing over the top of the cake.

19. Sprinkle chopped walnuts on the top.
20. Leave to set.

Handprint Elephant Card

This handprint elephant is a creative way to send a card and is also a great way to keep memories of little ones and their handprints, making the card extra special!

You Will Need:
Grey Paint
White Paint
Green Paint
Card
Pens/Googly Eyes

1. Lay out your piece of card next to you, cover any surfaces that you don't want to get messy with paint!

2. Cover the palm of your hand and fingers with grey paint then press your hand down on the piece of card.

3. Slowly lift your hand up, using your clean hand to help pull your painted hand away.

4. Allow to dry.

5. Turn your card 180° so that you are looking at an upside down print of your hand. Look carefully and you will see that your four fingers have made legs and your thumb looks like a trunk!

6. Use white paint to add toes to the feet and use a pen to draw on a tail.
7. Add a googly eye or draw one yourself.

8. Use the green paint to add some grass and you have a handprint elephant!

9. Add a message to the bottom of your card.
