This month we celebrate mothers everywhere! They work so hard to make sure everyone is loved and cared for. They deserve a day to be pampered and appreciated.

Prince Derek and Princess Alise have been sneaking around undercover to surprise Princess Odette and Queen Uberta!

They plan to have afternoon tea in the castle gardens - including handmade gifts, a delicious cake they made themselves, and a new flower garden, they spent hours planting together, for the royal mothers to enjoy! 

You can try these recipes too:

MADEIRA CAKE:

Ingredients:

  • 1 Cup (250g) Softened Butter

  • 4 Medium Eggs

  • Zest of 1 Lemon/1 tsp Vanilla Extract

  • 2 1/2 Cups (310g) Self-Raising Flour

  • Jam/Curd

Preheat the oven to 300 F (150 C/Gas Mark 2).  Grease a 9 Inch (24cm) round cake tin and line with parchment.

Cream together the butter and sugar until smooth and fluffy.  Add each egg one by one, beating well after adding each one.  Add the zest or extract and mix well.  Sift in the flour and mix until thick and smooth.

Carefully pour the mixture into the cake tin.  Bake for 60 minutes or until a skewer can be inserted in the center and be clean upon removal.  Allow to cool before cutting the cake in half to make two circular cakes.  Sandwich together with your favorite flavored jam or curd.

Decorate the cake with pretty patterns or just with something simple and delicious!

HOMEMADE BATH BOMBS:

Homemade Bath Bomb

  • 1 Cup Baking Soda

  • 1/2 Cup Citric Acid

  • 1/2 Cup Epsom Salt

  • 1/2 Cup Corn Starch 

  • 2 or 3 drops of food coloring

  • 2 1/2 T. Melted Coconut Oil

  • 3/4 tsp. water

  • 2 tsp Essential Oils of your choice

  • Saran plastic wrap

  • Cupcake baking pan

Mix all the ingredients together. Cut saran wrap into small squares and place over one of the cupcake molds-this will make it easier to remove bath bomb from mold. Fill mold with mixture and pack it in tightly. Continue until all molds are filled. Let mixture dry in molds for at least 12 hours.

HOLIDAY HISTORY:

Another holiday celebrated in May is Cinco de Mayo (the 5th of May) also known as Anniversary of the Battle of Puebla.

This is the celebration of a victory Mexico won over France in 1862. This was a small battle in a long war but the victory was unlikely so a proud moment in the history of the Mexican military. However, Cinco de Mayo is not a federal holiday in Mexico and many areas of the country doesn't observe the holiday at all. There is much more observation of the holiday in the United States as a celebration of Mexican heritage. Many of the larger cities in the US have festivals and parades for commemoration.
